If you are looking to add a burst of flavor to your summer corn without putting much effort into it, I’ve got you covered. Here, simply grilled corn-on-the-cob is treated to a luscious olive-oil based dressing made with fresh chopped basil, lime juice and zest. The herb and citrus combo is a swoon-worthy complement to the sweet, lightly charred kernels.
3- Ingredient Grilled Corn with Lime and Basil
Ingredients
2 tablespoons finely chopped fresh basil leaves
1 tablespoon extra-virgin olive oil
½ teaspoon finely grated lime zest
1 tablespoon fresh lime juice
¼ teaspoon salt
1/8 teaspoon freshly ground black pepper
4 ears corn, husked, silks removed
Directions
In a small bowl combine the chopped basil, oil, lime zest, lime juice, salt and pepper.
Preheat the grill to medium-high. Oil the grill’s surface. Grill the corn until it is slightly softened and charred in spots, about 10 minutes, turning several times.
Put the corn on a plate, drizzle the basil- lime mixture over the corn and roll the corn around in the mixture to coat evenly.
