This sauce is a mash-up of Marcella Hazan’s famous buttery tomato sauce and the olive oil based sauce my friend Maria’s Nonna used to make. It never fails to amaze me how a few simple ingredients can add up to something so tasty.
Note: for my three ingredient recipes, I consider oil, salt and pepper “free”
Ingredients
1 medium onion
1 28-ounce can canned whole, peeled tomatoes
3 tablespoons olive oil
1 tablespoon unsalted butter
Salt and freshly ground pepper to taste
Directions
Cut the onion in half so that some of the root end is still attached to each half. Peel both halves. Put the tomatoes in a heavy saucepan with the onion, olive oil and butter. Bring to a boil over a medium heat, then reduce heat to medium low and simmer, uncovered for 45 minutes, stirring occasionally and breaking the tomatoes up with a spoon.
Remove the onion and discard it or save it for another use such as pureeing into a soup or dressing. Season with salt and pepper to taste.
